I’d like to thank my dear friend and lovely interviewee, Olivia Rubio, for sharing a recipe from her country. Olivia is from The Canary Islands, and her traditional food is rich in spanish flavours. She has chosen to share a recipe that is a staple in her family. Olivia fondly remembers her mother, Macu, making Tortilla de Papas on her birthday when she was a little girl. Tortilla de Papas is Olivia’s favourite food and holds a special place in her heart, especially now that she’s away from home. I truly hope my attempt at this dish did it justice! Ingredients:
4 big potatoes
1 medium onion
5 large eggs
Oil for frying
Salt to taste
Optional:
Bacon
Tomato
Instructions:
Cut potatoes into thin slices. Oil a frying pan, let it heat up and then place potatoes into the pan.
Chop the onion into small, thin, pieces, and layer over potatoes.
Stir everything constantly until they’re crispy.
Place onions and potatoes onto paper towel to remove excess oil.
Whisk the eggs in a bowl until just combined, sprinkle salt into the mixture.
Heat up a small amount of oil in a pan.
Add the potatoes and onion (optional add-ins) into the egg mixture, and place quickly into the hot pan.
